Red beans Mexican Rice
Ingredients
• Oil 3-4 tbsp
• Onion 1 big, chopped
• Garlic 4-5 clove, chopped
• Red bell pepper 1 big, chopped
• Tomatoes 1 cup, cut in big chunks
• Cumin powder 1 tsp
• Paprika powder 2 tsp
• Oregano 1 tsp
• Black pepper powder 1/4 tsp
• Red chili flakes 1/2 tsp
• Chicken cubes 2
• Salt (only if needed)
• Rice 2 cups (soaked in water for at least 30 minutes)
• Kidney beans 1 can, drained
Preparation
1. Heat oil in a cooking pot and add the chopped onion and garlic. Sauté until translucent.
2. Add red bell pepper, sauté for 1 minute until the bell pepper is bright red color.
3. Add tomatoes and cook on high until the water from the veggies evaporates (2-3 minutes max).
4. Add cumin powder, paprika powder, oregano and red chili powder. Mix.
5. Add crushed chicken cubes and drained rice.
6. Cook for 2-3 minutes, stirring, until the rice absorbs the moisture.
7. Add 3.5 cups of water and drained kidney beans.
8. Mix, cover and cook on medium to low flame until rice absorbs all the moisture.
9. Put on dum (steam) for 10 minutes.
10. Serve hot.
11. Enjoy!

Carrot and lentil Soup
Ingredients
• Red lentil 1 cup
• Oil 2 tbsp
• Onion 1 medium, chopped
• Garlic cloves 2-3, chopped
• Carrot 1 big, cubed
• Tomato paste 2 heaped tbsp
• Chicken cubes 2
• Salt, if needed (chicken cubes mostly contain salt already)
• Turmeric powder 1/2 tsp
• Cumin powder 1/2 tsp
• Paprika powder 1.5 heaped tsp
• Water 4 cups
• Fresh coriander for garnish

Preparation
1. Heat oil in a pot and add onion and garlic. Sauté until soft.
2. Add carrot and sauté for 1-2 minutes.
3. Add tomato paste, chicken cubes, turmeric powder, cumin powder, paprika powder and water.
4. Mix well, taste and adjust salt if needed. Cover and cook for 30-35 minutes until the carrots are super soft. Lentil should also be cooked by then. If needed, you can add more water while cooking.
5. Now blend the soup using a hand blender until smooth and creamy.
6. NOTE if using blender, allow the soup to cool first and then blend. Blending hot soup in a blender can cause serious burns. After blending, the soup can be warmed again.
7. Garnish with freshly chopped coriander. Serve hot.


Healthy 4-ingredient Date Bars
Ingredients
• Soft dates 2 cups, pitted
• Peanut butter 3/4 cup (up to 1 cup if the mixture is dry)
• Coconut oil 1 tbsp
• Cocoa powder 1 tbsp
Topping
• Nutella or melted brown chocolate
• Melted white chocolate
• Cranberries (optional)
Preparation
1. Remove seeds from the dates and chop them into small pieces.
2. Add to the chopper along with 3/4 cup peanut butter and chop into fine paste 4-5 minutes).
3. Now check if the mixture is on the dry side add more peanut butter and chop again.
4. Now add coconut oil and chop until fine smooth paste is formed.
5. Lastly, add cocoa powder and chop again until the cocoa is well combined with the date mixture.
6. Arrange on to a baking tray into 1.5 cm thick slab and refrigerate until cold (1-2 hours)
7. Now apply nutella or melted chocolate evenly.
8. Decorate with white chocolate and cranberries and cut into squares. Enjoy cold.
